Snackbox No-Bake Snickers-Style Weetbix Slice (No Sugar, Hidden Veggies!)

Snackbox No-Bake Snickers-Style Weetbix Slice (No Sugar, Hidden Veggies!)

Lunchbox No-Bake Snickers-Style Weetbix Slice (No Sugar, Hidden Veggies!)

Introduction

Meet your new lunchbox hero šŸ«šŸ„œā€”a no-bake slice that tastes just like a Snickers, but without the sugar crash. Naturally sweetened with soaked dates and banana, it hides a sneaky serve of zucchini and packs in extra fibre thanks to All-Bran and Weetbix. The creamy peanut-butter chocolate layer on top is the ultimate indulgent touch.

Best part? It’s nutty, chocolatey, chewy, and totally kid-approved—plus there’s no baking, no refined sugar, and it holds up beautifully in lunchboxes.

šŸ’” No-nut school or family? Just skip the peanut butter and you’ve got yourself a Mars Bar-style slice instead.

Why It Works

  • Lunchbox-friendly: Holds its shape, no sticky fingers, and no sugar crash mid-school day.

  • Hidden veggies: The grated zucchini disappears into the base—kids won’t know, but you will.

  • Naturally sweet: Dates and banana give a rich caramel-like sweetness, so there’s no need for refined sugar.

  • Versatile: Peanut butter for that Snickers vibe, or skip it for a Mars Bar feel that’s school-friendly.

  • No-bake & easy: No oven, no fuss—just mix, press, drizzle, and chill.

    Ingredients (makes ~16 squares)

    Base:

    • 5 wheat biscuits (e.g., Weetbix), ~75 g

    • 1 cup pitted dates, soaked in warm water 10 mins

    • ½ banana, mashed

    • ¼ cup finely grated zucchini (squeeze all liquid out)

    • ½ cup All-Bran cereal

    • Optional: splash of reserved date water, honey, or maple syrup if mixture is too dry

    Topping – choose your version:

    Snickers-style:

    • ½ cup dark chocolate (chopped or chips)

    • 2 tbsp peanut butter (smooth or crunchy)

    Mars Bar-style (nut-free):

    • ½ cup dark chocolate (chopped or chips)

    • 1 tbsp coconut oil or butter

    Instructions

    1. Soak & Prep
Place dates in warm water for ~10 minutes until soft. Drain, reserving a little water.

    2. Mix Wet Ingredients
Mash banana in a large bowl. Add soaked dates, breaking them up with a fork or spoon until combined.

    3. Add Veggies & Fibre
Stir in grated zucchini and All-Bran. Crumble in the Weetbix. Mix well. If dry, add a splash of reserved date water or sweetener of choice.

    4. Soften & Bind
Let mixture sit 5 minutes so the cereals soak up the moisture.

    5. Press
Line a small loaf or square tin with baking paper. Press mixture firmly and evenly into the tin.

    6. Make the Topping

      • Snickers-style: Melt chocolate and peanut butter together until smooth.

      • Mars Bar-style: Melt chocolate and coconut oil/butter together until smooth.

    7. Finish & Chill
Spread topping over the base. Refrigerate at least 2 hours before slicing.

    Storage

Keep in an airtight container in the fridge for up to 5 days, or freeze for up to 2 months.
