What You'll Need:
- 5 eggs
- 2 rashers of bacon, chopped (I use 1, my boys don't love bacon, BUT I DO)
- 1 handful of spinach, roughly chopped
- 2 spring onions, finely sliced
- 3-4 cherry tomatoes, finely chopped
- A splash of milk
- ¼ cup plain flour
- 1 sheet of puff pastry, cut into squares
How to Make Them:
- Preheat the oven to 180°C (350°F) and grease a muffin tray.
- Cook the bacon in a pan until crispy, then set aside.
- Whisk the eggs, milk, and flour in a bowl until smooth.
- Add the bacon, spinach, and spring onion to the egg mixture and stir to combine.
- Line the muffin tray with puff pastry squares, gently pressing them into each cup.
- Pour the egg mixture into the pastry-lined muffin cups, filling about ¾ full.
- Bake for 20 minutes or until golden brown and set in the centre.
- Let them cool slightly before popping them out and enjoying!
