McQuiches: The Ultimate Bite-Sized Protein Snack

What You'll Need:

  • 5 eggs
  • 2 rashers of bacon, chopped (I use 1, my boys don't love bacon, BUT I DO)
  • 1 handful of spinach, roughly chopped
  • 2 spring onions, finely sliced
  • 3-4 cherry tomatoes, finely chopped
  • A splash of milk
  • ¼ cup plain flour
  • 1 sheet of puff pastry, cut into squares

How to Make Them:

  1. Preheat the oven to 180°C (350°F) and grease a muffin tray.
  2. Cook the bacon in a pan until crispy, then set aside.
  3. Whisk the eggs, milk, and flour in a bowl until smooth.
  4. Add the bacon, spinach, and spring onion to the egg mixture and stir to combine.
  5. Line the muffin tray with puff pastry squares, gently pressing them into each cup.
  6. Pour the egg mixture into the pastry-lined muffin cups, filling about ¾ full.
  7. Bake for 20 minutes or until golden brown and set in the centre.
  8. Let them cool slightly before popping them out and enjoying!
