Easy Weetbix Slice Recipe

Looking for a quick, delicious, and family-friendly snack? We had some leftover dregs at the bottom of the Weetbix box and turned them into this irresistibly good slice. Let’s get started!


Ingredients:

  • 3 Weetbix, crushed
  • 1/2 cup sweetened condensed milk
  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/4 cup tahini
  • 1/2 cup chopped almonds
  • 1/4 cup chopped dates
  • 1 tablespoon maple syrup
  • 2 tablespoons sesame seeds
  • 2 tablespoons sunflower seeds
  • 1/2 cup chocolate chips or sultanas (optional)

Instructions:

  1. Prepare the tin: Line a 20cm x 20cm (8-inch) baking tin with parchment paper.

  2. Mix the dry ingredients: In a large bowl, combine the crushed Weetbix, oats, shredded coconut, chopped almonds, chopped dates, sesame seeds, and sunflower seeds.

  3. Cook the wet ingredients: In a small saucepan over low heat, combine the condensed milk, tahini, and maple syrup. Stir continuously until the mixture is smooth and well combined. Remove from heat.

  4. Bring it all together: Pour the warm tahini and condensed milk mixture into the dry ingredients. Stir well until all the ingredients are evenly coated. If adding chocolate chips or sultanas, fold them in at this stage.

  5. Press into the tin: Transfer the mixture into your prepared baking tin. Use the back of a spoon to press it down firmly and evenly.

  6. Set in the fridge: Place the tin in the refrigerator and allow the slice to set for 2-3 hours, or until firm.

  7. Cool and slice: Once set, remove the slice from the tin and cut into squares or bars.

  • Make it dairy-free: Use a plant-based condensed milk alternative.
  • Add crunch: Sprinkle extra chopped nuts or seeds on top before setting in the fridge.
  • Double the batch: This slice is freezer-friendly, so make extra and store for up to 3 months.
